Mashed Potatoes Make Everything Better!


Yesterday was one of those days that I woke up with a huge amount of energy.  I knew I had to get going, so I jumped out of bed to get a good workout in before I had to wake the troops and get cupcakes ready for school.  Yep that would be me making more cupcakes for school in the morning!  Well, the workout was craptastic to say the least.  It was disjointed.  Does that ever happen to you?  I woke up not really knowing what I was going to do for my workout.  I knew the usual cardio and muscle toning, but I did not have a plan of action.  Bad call on my part.  I ended up putting together a bunch of crap since I had to work out to my computer again.  (They are supposed to come and fix the AC tomorrow...hopefully I will have my DVR back soon...it's where we are all sleeping!)  Anyway, I did what I could to make the best of it.  Got everyone in the shower and I was off to finish some cupcakes.

This was an interesting project for me.  I learned something along the way.  Jay, my 11 1/2 year old, was learning about Australia and they were discussing a popular dessert from there.  I did my research on what they were talking about and came up with Lamingtons.  Essentially, they are a sponge cake cut in cubes, dipped in chocolate and then coconut.  I decided it would be a little easier to do cupcakes for the class, so these were by no means traditional, but my own take on them.  I pieced together some recipes to come up with this...I did not want to fail, so I pulled out old faithful...
She has been abused (by Max), but she is loved!  Anyway, the cupcakes were a hit with the class and I loved learning about something new too!  I love food and culture, so I always love the opportunity to learn about people and what they like to eat.  I guess that is why I love reading blogs so much...nothing but people and food!


So, after a crazy morning of cupcakes, breakfast and the usual drop offs at school...I had to clean up and get going.  We ran some errands.  Checked out the The Talisman trade at Barnes and Noble.  My hardworking husband drew every bit of the inside of that book!  It was nice to see it on the front table at the book store!

The illustrator wanted Salisbury Steak, mashed potatoes with gravy and green beans.  He hardly eats meat anymore and definitely does not eat much beef, so I was happy to oblige.  I had some mushrooms kicking around the fridge that I wanted to make a burger out of and I thought that would be a great way to eat kinda what he was eating.  Well, I never finished mine.  I ran out of time and energy!  My loving husband looked at me and said, you should make this with mushrooms instead of meat....ugh, why did I not think about that?  I was trying to make it way more difficult than it had to be.  How 1950's does this look???

Best Mashed Potatoes

4 cups cubed potatoes
4 cloves garlic
unsweetened almond milk
Smart Balance Light
kosher salt
fresh ground pepper

Cover potatoes and garlic with water and boil until tender.  Pour the water off and add a splash of almond milk and smart balance to your taste.  The illustrator likes a lot of butter!  This is an ongoing battle in our home!  I think the key is the garlic!

I had an egg white omelet, with potatoes and green beans.  I didn't mind.  I love omelets.  I just felt like I had run a marathon in the kitchen and gotten nowhere.  I am putting the lentil burgers together tomorrow night...I hope they are what I am looking for!
I decided after I started eating that my meal needed a little something, so I smothered it in spicy mustard! Much better!
Best dessert ever...well most refreshing and sweet anyway...
I am all over these strawberries right now.  I know I should freeze some, but I can't stop eating them!

What is your favorite fruit and why?  Apples are my favorites because they are refreshing and they have substance to them.  I like a crisp apple, so fujis, pink ladies or granny smiths are my favorites!

    Oh yes, I've most definitely had those disjointed "craptastic" workouts before. Halfway through I question why I'm even trying. Good job for just getting it done though - and baking in the morning too! You go!!

    My favorite fruit of all time has to be strawberries. I cut up some this morning to top off my Greek yogurt snack this afternoon.

    I need to just come and live with you for a week (make it two) to get used to how you live because I read what you do and how you prepare food and I KNOW it's better. I just don't think I could ever do it on my own. Mom told me about Almond milk a few weeks ago. I am going to buy (since it costs about the same as the organic I am already buying) and see if anyone notices. I don't think I would have but I am not the one drinking full glasses of just milk.

    As far as work outs are concerned mine are all disjointed I guess since I haven't worked out since well....hmmm. I am in need of a life make over

    You are awesome!!! Your posts make me want to jump up and get things done. Don't get me wrong, I bust my butt all day, but a little more butt busting should be for me (like eating right and working out, etc.)

    Your desserty photos are killing me! Choco & coconut is one of the best combos. And I have so many favorite fruits but I think I would have to say canteloupe just because I NEVER get tired of it :)

    And here's something funny... I don't really like fruit. I dunno why- I just don't enjoy it. There are a few exceptions like coconut and avocado (so I guess that would be my favorite?), but the "traditional" fruits people mostly think of are NEVER on my shopping list...

    No worries- what I don't eat in fruit, I make up for by veggie overload. :)

    Yes, I know all about those craptastic workouts... I finally just started planning them out a week in advance so I would no exactly what to do each day. But uhhhh, I've yet to do that for this week, oops! ;)

    Apples are my favorite fruit too!! I eat one almost every day!! :)

    Aw I love making cupcakes for school. Right now I make them for my own class, but one day I'll be making them for my kid's class too :) I basically love any type of fruit but my favorite would probably be blueberries or pomegrantes.

    yay for waking up energized! love that feeling. the cupcakes also look great, but that goes without saying since they have coconut :) i bet the kids loved you!
    the potatoes look lovely, too - why has it been so long since i've had mashed potatoes?!

    The cupcakes look to dieee for. When you mentioned Australia I immediately thought "vegemite...nooooo" <-- that stuff is n.a.s.t.y. lol

    the workout thing..yes, all the time. If i want to do any kind of alone time working out, it has to be crack of dawn. Sometimes my alarm goes off, i am so tired but know if i dont do it, that's my one and only shot for the day and i will hate myself if i dont do it, so i get out of bed but have a horrible workout and am confused and disjointed, totally.

    i knew you could appreciate my short order cook post. i thought of you when i wrote it.

    food allergy friend of mine said that although it's a PITA to cook separately for all her family members, why subject johnny to susie's restrictions and vice versa...they can eat so little, that if she had to combine the two needs/paths, no one could eat anything. that's about the size of it!

    My "workouts" can vary. Some days are just crappy...but that just means the next will be good. :-)

    Sorry about the workout troubles. I've been struggling with mine this week too for some reason. I'm going to try to plan ahead for next week so I don't feel so off. Hope the a/c is fixed soon.

    My fave fruits are strawberries and green grapes!

    I have a couple of books that resemble your cookbook - I guess our dogs have something in common: a love for chewing on paper!
