Quinoa Breakfast Fruit Bowl!

Friday...gosh I need this week to be over. I'm not used to this much running around on weeknights. Not to mention the fact that I haven't actually caught up on any sleep from staying out so late on Saturday. Jay had a band concert last night and honestly, it's starting to weird me out a bit that time is going by so fast. He will be in 8th grade next year. Where has the time gone? Anyway, tonight we have Max's play, which I'm excited to see. He loves acting and singing, but he's still a little on the shy side. As long as he's having fun, I think this is a good thing for him to start with.

This morning started out with a nice workout. I got up at the usual 6am, did some kickboxing and then pilates. It felt great. I'm keeping things positive lately. We have so much going on that I can let things bring me down pretty quickly. I'm really working on letting things go. I think I'm doing pretty well with it. Besides, focusing on the not so good stuff really can bring you down too. 


Speaking of good stuff, let's talk about this treat! I saw Ashley post a quinoa masterpiece the other day and it sent me straight to my fridge to scavenge for things I could throw in one of my own. 


Spring is here, so strawberries and zucchini have found their way into my fridge. I'm still using up the last apples I bought, so this batch is the last I will buy until fall. I can't believe I just typed that...UGH, I love you apples! 


Anyway, so this was so perfectly filling and refreshing. I'm definitely doing more of this during the warmer months. I love how fresh everything tasted! 


The coconut cream with the bananas was such an over the top incredible flavor. I loved the texture of the quinoa with this too. A little crunchy, with a little sweet, with a little tart all with a little creamy...best breakfast I've have in a long time! This is why I'm doing the seasonal food challenge!


Quinoa Breakfast Fruit Bowl
(serves two or one hungry girl)

1 cup cooked quinoa
1 small zucchini
1 small apple
1/2 tsp lemon juice
1/8 tsp pumpkin pie spice
1 small banana
4 large strawberries
2 TBSP coconut flour
4 TBSP almond milk
stevia or honey to taste

Place the zucchini and apple in a food processor and process to small pieces. In a bowl, combine the quinoa through pumpkin pie spice. In a seperate bowl, combine the coconut flour and almond milk (and sweetener of choice). Now, layer it up. 

I totally ate the whole thing, but in my defense, I had to cut the grass this morning too. Now I wish I left a little for an afternoon treat. I think I may need to go make another one!

Quinoa, love it or hate it? I've heard mixed reviews. Obviously, I LOVE it!

  1. YUM. I love strawberries for starters. I've yet to make a non-savory quinoa. This looks so incredible. I feel like I say that all the time ;-)

  2. The breakfast bowl looks tasty. I should make one with all of the strawberries I picked. It's so true - let the little stuff go and focus on the big stuff! :) :)

  4. Quinoa is a staple in my kitchen. I love that you put zucchini in your b'fast bowl. Totally trying that next.

    I took a note from you and made socca pizza. You are soooo right about not needing the olive oil!

  7. I'm a quinoa hater. I have tried and tried but just can't get past the texture of it or something.

    Hope you have a chill weekend. I'm so ready for it too. It's just been BUSY this week for some reason. I hate when I can't even tell why but just feel run down and overwhelmed.

  8. Hopefully at some point over this weekend you'll get some downtime?

    I know the feeling of running around mid-week... it throws off your normal schedule and makes the entire rest of the week feel out of sorts. I just don't adapt as well as I used to. (that made me feel old)

  9. Jenny, I actually cooked 1/2 quinoa with 1 cup water, brought it to a boil and simmered it for about 15 minutes. Then I let it sit for a little bit. I added more water that I normally would, but I wanted it to be puffy. This gave me 2 cups quinoa. I like sprinkling it on my salads though, so I always keep some cooked in the fridge.

  12. that looks absolutely delicious!!! could you taste the zucchini or was it like zucchini bread? ohmygoodness, i have none of those ingredients & i want it soooo bad! farmer's market tomorrow!

  13. tea-bag, no, you can't taste the zucchini in it or at least I will say the apple and zucchini compliment each other well. It was very fresh and light tasting.

  15. oh wow, this looks wonderful! i admit, i'm a little afraid of the zucchini (a vegetable that is my nemesis...) but i think i trust you that it's not too pronounced ;)
    f you're anything like me, you're going to wind up with one or two lone apples for the longest time just because you don't want them to be gone :P

    Tried quinoa (correct pronouncation .... "keen-wah?")several years ago. Expensive for sure. Every so often worth it.

    With strawberries, maybe a few blueberries .... gonna go for it this weekend ... tomorrow's breakfast .... YUMI!

  20. I cook up a big batch of quinoa every Sunday and use it all week for breakfast and then everything from stuffings to cold salads.
