What I do love to do...
and eat them!
Ok, so I made a couple of changes the other day out of desperation. I was running low on almond milk and didn't realize this until I was elbow deep in my protein cake making. So, I subbed some unsweetened applesauce and some water for the almond milk in my original recipe...I actually liked this one BETTER! It's fluffier and more cakey. For all you doubters, these are not eggy at all! My favorite protein powders to use in this recipe are SunWarrior Blend, Plant Fusion and Life's Basics. They all work and they are all delicious!
Vanilla Protein Microwave Cake
(inspired by this post on Stuft Mama)
1 scoop vanilla protein powder, this was a serving of protein powder per their measurements
1 TBSP coconut flour
2 TBSP quick oats, oat flour or ground whole oats
1 1/2 tsp baking powder
3 packs stevia or equivalent
1/4 cup unsweetened applesauce *(or water)
1/4 cup water
1/2 cup egg whites
Mix everything together. Pour into a sprayed microwave safe soup size bowl. Microwave 6 minutes.
***Edited to add that water instead of the applesauce works really well too! The cake is lighter in texture and fluffier with all water.
Peanut Butter Chia Topping
2 TBSP peanut flour or peanut butter
1 tsp chia seeds
stevia to taste (depending on how sweet you like it)
1-3 TBSP water (add a tablespoon at a time so it's not too runny, but the chia will soak up the liquid)
Booking travel...love it or hate it? Protein cakes...love them, never tried them or hate them?
Now, I'm off for a run and it's time to get this day going! Happy Wednesday my friends!
Travel issues... they're never fun. I can handle a weekend trip to one destination. But throw in additional cities/tickets/hotels? I'd be a hot mess. Meh. :( Hopefully you're getting through it without too much of an issue!
ReplyDeleteOoh, I could totally make this at work and it'd be a great snack! Yum.
ReplyDeleteI really really need to try these. I don't have coconut flour though so what would be another good sub? I love adding chia to my PB2/Stevia mixture. It's like icing. YUM
ReplyDeletewhere were you last night when i needed a dessert idea?! ;)
ReplyDeletethis look amazing - especially with those figs. i am obsessed right now!
good luck with all the travel issues!
ReplyDeletewe were down to one car before and it was stuff organizing schedules, etc.
and yay for figs! I have been enjoying them everyday, going to be so sad when they are no longer in season :(
cake looks delicious, always love a quick protein rich cake to enjoy!
have a great day.

I need to try this version Sarena! :) It looks so good. I've never had a stinking fig. I need to get my hands on some pronto.
ReplyDeleteBooking travel- hate it. It takes me three times as long as it should because I'm always scared I'm going to mess it up.
That actually looks tasty! I find that most protein muffins do not ;) I always have issues baking with coconut flour - that is comes out too dry - so I'm definitely going to try this!
ReplyDeleteI think it's so hard to plan for traveling. Stresses me out!
ReplyDeleteI'm not much of a protein cake person - the texture kind of freaks me out. I'm weird. Lol.
I am not good at booking travel, when I don't know the area and I'm trying to find things in close proximity...
ReplyDeleteI remember before the voice command - gps feature on our phones, Jason would call me on his way home and ask me to look up "insert location here" that is on his way home... I'd be looking at online maps as he drove, totally clueless and becoming more frustrated... GAAH ;)
now we'll be talking while he drives, and I'll say hang up with me and ask your phone! :D
I just got some figs yesterday... OH SO GOOD!
I would legit pay you a million bucks if you'd come over and make me one of these bad boys right now. HOLY YUM!!
ReplyDeleteOMG! I NEED to make these!! They look so so good! I may try it with chocolate protein powder, divine ;-)
ReplyDeleteWhat might you substitute for the oats? Rice flakes? Quinoa flakes?
ReplyDeleteHeather, you can definitely use regular flour for the coconut flour.
ReplyDeleteLaura, I don't see why rice flakes or quinoa flakes wouldn't work. I would think either would be good!
Yum! Breakfast tomorrow!!
ReplyDeleteOk, so far I've tried your blueberry (but mine was raspberry) and chocolate and TOTALLY fell in love! And now you say this one is even CAKIER?! Is that even a word...I don't know, but I think it should be! Can't wait to try it!!
ReplyDeletewe love love love the microwave cakes. the travel hiccups not so much...
ReplyDeleteThank you, thank you, and thank you again. This looks yummy!
