Insanity and Almost Doughnuts...
I decided that since my life seems like insanity, I would get up this morning and do some Insanity. That was one way to kick Monday in the butt! The past couple of weeks have been a constant rotation of illnesses around here. Max got sick a week and a half ago and while he's gotten better, he still has a nasty cough. Then Jay got sick last Wednesday with a fever of 104 degrees. He had the fever for two days and then when the fever dropped, he got a horrible sore throat. So, this leads us to the doctors office first thing on Saturday morning! Fun stuff. Luckily for him (complete sarcasm here), it's a virus and well, there is nothing they can do for that. Also, luckily for him (again, read sarcasm), he got a couple of vaccinations while he was there. Again, good times! Now Jay has the cough...


This all led to a weird day of being completely off schedule with meals and that led me to the kitchen to play with my new toy. I broke down and got a Wilton doughnut pan! Everyone seems to be baking doughnuts lately and I have wanted one for years. Yeah, years. I haven't had a doughnut in 7 years (probably more than that since I wasn't a typical doughnut eater to begin with - unless we are talking about Saturday doughnuts that my dad used to get) and it's been 2 years since Tony had one.


So, I got to playing. I will say these were good, but they seemed more like little short cakes to me. While not a doughnut, delicious anyway. I know I over filled the cavities, but I was excited! I will be working on them and will report back when I have found the ones that knock my socks off!

As for Sunday and daylight savings time, yeah, I did not really get that extra hour. When you have an internal alarm clock (and two cats), neither of these things seem to understand the whole reset the clock thing. Oh well, it did give me an extra hour to get more work done around the house, which I was appreciative of. Some of my paper stacks were dealt with (which if you know me, the stacks can get out of control) and tons of laundry got done! Maybe no one will have to ask me for socks this week!


Then I enjoyed this with tasty beverage with Tony! Kahlua and unsweetened vanilla almond milk go together like peas and carrots! It was the perfect ending to the weekend. I know this week is going to be a bear, so I'm hoping to be on top of that!

    YAY! I saw your comment on Averie's post today, about making the vegan gluten free doughtnut!

    I have had pans for a while, and have made up several recipes... nothing share worthy YET. they all taste good, like you said, but they are not doughnuts! :) we'll get there...

    LOVE starting a week with Insanity! that will guarantee a calm week, right?? have a good one - hope everyone is feeling better soon!

    Oh that stinks that the sickies have started invading the house - guess it's that time of year. Insanity is one workout I haven't tried and really want to.

    I dread the time of year when the sickness keeps getting passed around. Hope everyone is on the mend soon!

    Cant wait to see how the donuts pan out for you. IT can be so tricky getting recipes right when trying to bake GF (or any baking, actually!) but you sound so close!

    And Kahlua and unsweetened vanilla almond milk sounds perfect :)

    I've considered using Kahlua in buttercream. Sort of like I did a few times with Baileys. Thoughts?

    And one of those pans is on my Christmas list. I want to make donut pancakes...

    Ah, it's the season for sickness!
    The donuts look yummy--I always wonder if using a donut pan is just a psychological thing...I mean, how can a baked donut taste like the real thing? But the look of a donut is appealing :)

    Thanks for reminding me of Insanity. I think I will do one of those workouts on Friday to mix things up! Then reward myself with that drink. Yum!

    One of my friends just gave me a donut pan, and I am so excited. Pure2Raw girls have a couple of great recipes, and I can't wait to try them. Was also thinking about making your lemon pound cakes in donut form as I'm pretty much obsessed with them. My brother asked if he could stop by and pick up the leftovers after Summer's party, but CD and his parents finished them off. I did my part and ate all the mini ones. So yummy Sarena! :)

    I just tried kahlua and almond milk for the first time a couple of weeks ago...SO good! Yay for the doughnut pan! I need to get back in the kitchen with mine for more experiments, but I'm worried that nothing will be able to top my chocolate cherry ones...which reminds me that I still have some in the freezer! Score!

    So sorry the boys aren't feeling well. Tis the season! I've definitely noticed more and more people at the hospital with various levels of "the funk" :(

    I am also caught up in the baked donut craze...happened to find one at half price so there was no excuse not to buy! I am going to use the recipe that wilton provides adapting the buttermilk for rice milk and vinegar and the eggs for applesauce, baking soda and water. We are fine with gluten. My son has been patiently waiting for the weekend for us to bake them...I have to admit...I am excited too! Haven't had a donut in years...Susan H. @ the food allergy chronicles
