Bugs, Tests and Eggs...
So the little varmints infected me...with the stomach portion of their funk! I guess it was bound to happen. I was up all night with lower GI stuff going on. Not pretty. Not only did I not sleep, Tony didn't sleep and I woke up (I'm using that term loosely) feeling like I'd been squeezed out like a sponge. That brings back horrible memories of the time before I went off dairy. Needless to say, I did not have much in the way of energy this morning so my "workout" (again, using that word loosely), was ballet strength. I needed to move my body since I had to get to work today and I was going to have to get the boys to school too. So, up and atem'!

I've been seriously focused on nutrition lately since I've started studying. I'm loving it and I've found a good process for me to learn, so things are coming along. Learning about cells and all of the organs was a bit straining on the brain, but now that I know the information, it takes all I have not to use technical words when I talk to Tony about it. He starts to get that glazed over look when I start talking about the liver...although I do the same thing when he starts talking about fonts. Anyway, I took a quiz today and while I was bummed I missed two (I kind of beat myself up over this), I still got an A, so if nothing else, now I know the ones I got wrong. It's all part of learning.

I've also buckled down on our diets as of late too. Today is not a prime example for me since the bug and all, but I guess not too bad. My boys don't like to eat breakfast and that really irritates me. I'm VERY pro breakfast. We have a rule, you have to eat something that will fuel you until snack or lunch. I went over a list of things I would have available for them so they could have a little something good.


This is what Max asked for...yeah he's 10 going on 80. He had an egg, tomatoes and avocado (note, he does not get the avocado love from me - yuck). This was a killer breakfast for him and now we are keeping boiled eggs on hand for quick meals and snacks.


For lunch today, I needed something easy on the stomach with some good stuff in it. I opted for an omelet (if you put a lid on it when it cooks it will puff up) with a hand full of spinach (I need the iron), some tomatoes and nutritional yeast.


I will spare you a picture of my super sexy bowl of Corn Chex topped with bananas, strawberries and unsweetened vanilla almond milk. While not that exciting, it totally hit the spot. I'm hoping the bug worked it's way out so tomorrow can be filled with more tasty eats!

I gotta ask, what do you eat for breakfast? Any quick healthy ideas?

    Ick so sorry you had a stomach bug - that just about the worst and seems to take a few days to feel normal again. Love that you're getting into the studies - kind of knew you would though ;-)

    I let my oatmeal soak overnight in either just water or a mix of almond milk and water, stevia & cinnamon then heat the next morning when I get to work. I also chop up apple and add in cinnamon and liquid vanilla stevia and heat for 30 seconds and stir into the oatmeal.

    oh poor thing. Thats the worst. I am surprised you got out of bed. But i am also suprised at maxs breakfast. Can I adopt him?

    Yikes, so sorry you caught the bug-- stomach bugs are the worst :-(

    Breakfasts over here are pretty boring. Smoothies, peanut butter toast, and the occasional bowl of cereal or oatmeal are all we really do. I love breakfast, but I'm not one to get adventurous with that meal :-)

    Max asked for that?!?! Wow! I think I was still eating pop tarts... until half way through college...

    My breakfasts are either oatmeal with some cereal on top, peanut butter toast, or an omelet/breakfast burrito. At least I'm switching it up- there was about 6 months where I ate oatmeal every single day. Yikes.

    For breakfast I like green smoothies with protein powder. Normally I work out before breakfast and am ready for a protein shot. Otherwise, I love oatmeal whips with egg whites or bananas and topped with lots of cinnamon/PB/fruit/whatever the moment calls for. I also love roasted grapefruit and peanut flour pancakes.

    Good luck with classes! I'm totally envious.

    I love protein shakes for breakfast. I finally found a vegan powder that taste absolutely delicious and blends so well with some frozen fruit, almond butter and almond milk.

    For a warm breakfast my mom makes a really yummy quinoa cereal cooked in coconut milk, ground flax and agave. She makes a ton so you can just reheat it for following mornings.. and the best way to enjoy it is with a poached egg on top. Delicious.

    Awww.....hope you feel better soon! Stomach bugs are the WORST.

    Maybe it's a boy thing because Colin doesn't like breakfast either! I have to force feed him breakfast. And then he wants something sugary (of course). So the rule is he can have what he wants, as long as he eats some fruit with it, too. Seems to be a good balance!

    Hope you're feeling better! The stomach bug is killer!
    Eggs are my go-to breakfast (which I usually eat at lunch time)...they're easy and quick, and I just add herbs and different things to them so they feel different everyday! Sometimes I also mix together peanut butter, protein powder, and stevia and eat that---it makes cookie dough!

    I had a nasty stomach bug on Monday. Hope it passes quickly.

    I hopped on the green smoothie train as of late. I must admit, I'm not 100% thrilled, but I know it's good for me, so I do it anyway. I do occasionally cook up a fried egg sandwich or some sort of hash brown dish like Potatoes O'Brien. I also like steel-cut oats soaked in the refrigerator overnight. They're really chewy. :)

    so sorry to hear about the stomach bug you have, those nights are never fun! hope you feel better soon.
    we have been enjoying goat or coconut yogurt lately with some chia seeds for breakfast or can be a smoothie or something like that. it all depends on what is planned for the day. fruit can be a great on the go option too :)

    That is a super impressive kid breakfast! All I ever wanted was Lucky Charms. Also, I loooove that ballet workout- I feel so temporarily graceful! My favorite breakfast is oatmeal with bananas and a spoonful of peanut butter on top. I eat it most every day.

    I am recovering from some stomach bugs too! hope you will feel better SOON! I have either oats and chia seeds soaked overnight and heated up with some kind of nut milk and some fruit or an omelette with grainy avocado toast in the mornings. somehow i just cant have oats every single day- i NEED to switch it up!

    typically I roll with a cacao flaxmeal sweet potato smoothie, but mos def the eggies with tomatoes and onions sound good, espesh with avocado. go max! he knows what's up! :-)
