Eggs and a Give Away!

Those of you who have been reading about me for a while, know that I don't eat meat. My boys do, but I choose not to. I have complete respect for those that choose to eat meat, but for personal reasons, I choose not to. Some of you may also know that when I decided not to eat meat and being that I can't have dairy, I chose to up my soy intake and then discovered that I am allergic to soy. So, where do I get my protein from? My protein intake is a huge focus for me. For a while, I was eating a large amount of beans along with egg whites (my favorite part of the eggs) for my main source of protein. Then I got a stomach bug and things turned really bad by depleating my system of important vitamins...B12 to be specific. So, I started researching. I'm a pretty thrifty person (some would say cheap), however, my need for vital nutrients through my food is important and I need to give my body the best. So, through my research of eggs, I came across Eggland's Best.


I've been using Eggland's Best for a while now. They offer a variety of products ranging from size to how they are raised (all humanely). I like that due to their vegetarian feed, there nutritional breakdown is really high.


Eggland's Best has 25% less saturated fat, 10 times more Vitamin E, 3 times more Vitamin B12 (my favorite!), 2 times more Vitamin D, double the Omega-3, and 35% more lutein than ordinary eggs.  Eggland's Best eggs are also a good source of Vitamin B2 and contain just 175mg of cholesterol.
  

 If you would have asked me a year ago if I thought there would be a difference in the quality or taste of eggs due to their feed and how they are taken care of I would have said no way. After cracking open my first Eggland's Best egg, I could immediately tell a difference. The yolks are darker in color and the shells are thicker. The eggs are much heavier too. I can honestly say, I can never go back to a lesser quality of egg again.

    Veggie omelets! Lots of broccoli, mushrooms, onions, and spinach... tomatoes, peppers - mixed up with three eggs. I usually cover the pan, so the eggs get all fluffy and big.

    I eat eggs everyday! They are so yummy, but my favorite way to eat them is scrambled with green, red and orange peppers, onions, a bit of daiya cheese and salsa! So filling and so healthy and now my mouth is watering ...Mmmmm.....

    Adding a whisked egg or sometimes just the white into my oatmeal in the last couple minutes of cooking has recently become my favorite egg use. It makes the oats so fluffy & since I don't eat meat either, adds protein!

    I can't decide between quiche and breakfast burritos. Both you can add whatever you have on hand and can be eaten for any meal. Yummy!

    I just had to comment on this post. :). I really miss eggs right now with this special diet and can't wait to eat them again. My favorite egg dish is scrambled egg whites with sauteed spinach and garlic. For dinner. Yummmm.

    I don't eat a lot of eggs, but I do occasionally bake with them. Sometimes, I just crave that nostalgic taste and texture that real eggs give to things. :)

    Love eggs - they are my "go to" meal when I need something fast and filling. Scrambled with chopped green onions, served on gluten-free toast with a few shakes of texas pete is probably my favorite! Thank you for the great give-away!

    Well clearly I love eggs in anything that is baked and covered in sugar/chocolate. ;)

    But they're a main source of protein for me, too- so I have them scrambled most often. Fabulous.

    My favorite way??? That's such a hard one! I just love eggs!!! Frittatas, poached, scrambled, fried, topped with hollandaise...mmmm.

    My current breakfast hit is some hashbrowns topped with a fried egg, some deli sliced ham and a slice of provolone. Yum.

    lol...now I'm hungry.

    You have succeeded in making me want eggs for lunch! Although that isn't too difficult because I love eggs as well!

    My husband is on a protein fix right now and eats 3 boiled eggs everyday, so we are buying eggs like crazy! (I think I have 2 dozen in my fridge right now.) But I love scrambled with some deli ham added in! YUM! :)

    thanks for holding this awesome giveaway! I love the incredible edible egg! My favorite way changes, but recently I have been on a huge poached egg kick. I like to poach two and eat them with sauteed garlicky greens. Once summer hits up full blast, I'm sure I'll be back on my love for frittatas with goat cheese, sundried tomatoes and whatever veggies I have on hand.

    One of my comfort foods growing up was a fried egg on white bread with mayo, salt, and pepper. And when I worked at a diner, I loved my cheddar, bacon, and green pepper omelets. Okay, so I wasn't the healthiest eater...
    While I still cook up eggs for my husband, I personally can't eat the yolks anymore. But I can still bake with them. So my current favorite way to eat eggs is definitely in baked goods. ;)

    Bacon, lettuce, tomato and fried egg sandwiches, followed closely by guacamole omelets. My boyfriend is low-carb/gluten-free and I'm allergic to milk, so we eat a lot of eggs, there's a huge difference in flavor between regular store eggs and ones fresh from my parent's backyard, but I was truly surprised by the noticeable difference between even the cheap eggs and the cage-free ones.

    I am a huge egg lover!
    Walmart sells eggs (Great Day brand) that have all of the same benefits as Eggland's best, and cost half the price. I have done a taste test between the 2 and actually like the Great Day ones better. You should give them a try if you can find them.

    I love over easy eggs on a piece of toast. Since my body decided to totally dislike dairy instead of just dislike it a little I have been trying to find a way to make them taste as good without cheese as they do with it.
