| 10 Pounds Of Peanuts! |
So my boys all went chasing after the moon last night only to see a cloudy sky. They loved the adventure even if they couldn't see the eclipse. I was sadly awake for that hour. So, I slept in simply because I could. I think we could all use a little extra rest right now, so I just went with it. I hate working out later in the day though because I feel like the day is wasted even though I have already gotten things accomplished. I still need to work out though. It is crappy outside and that is sucking my motivation away! I have to set times to work out when I start it later in the day...like specific times. I will be working out at 2:00. Typing it makes it more real...like I have to do it!
So, my grandmother sent me 10 lbs of raw peanuts for Christmas. Now I need ideas! I think I am going to make some "crack nuts" with peanuts instead of pecans. I am definitely going to make peanut butter...any other ideas?

That's a whole lotta peanuts! But, considering we can go through a pound of peanut butter a week in my house, I don't think we'd have a hard time using them up. :)

Holy bag of nuts! Wow. What about homemade peanut butter? Or maybe some brittle.
Sometimes sleeping in trumps workouts. Actually, sleeping in typically trumps AM workouts for me ;-)

I have a few recipes for peanut butter cookie dough balls (raw, vegan) that use peanuts (ground) + dates, vanilla, sugar, etc. That's what I love using peanuts for.
And of course roast them, salt them, cinnamon + sugar, you name it, roasted nuts rock!

My first thought was not "that's a lot of peanuts." it was "thats a lot of peanuts to unshell." Holy moly! haha. I think crack nuts would be great with peanuts...though you know I'd try making about 20 different variations of peanut butter :P

Tehe, crack peanuts. Love it. Grind and make PB muffins with jam frosting! Um, peanut granola (ooh, I think I'm gonna make that ... can I borrow some peanuts?)

haha that is a very useful Christmas present! You could make peanut/peanut butter granola bars! Or a stir fry with peanut in it.

My favorite peanut recipe is a very simple pesto. I serve it over grilled shrimp & brown rice (or quinoa).
You need: peanuts, cilantro, lime, olive oil and sea salt. Here's the recipe. Enjoy!
