Baked Banana Oatmeal
So, what are the odds that I would get sick? Um with three funky men all over the place, I would say highly likely. Since a sore throat started to settle in with a little fatigue, I am going for the "how many virus fighting foods can you consume in one day" approach. You see, I get to see my family for Thanksgiving and it has been a year since I last saw my sisters! WE HAVE TO BE WELL!


So, I settled on an easy breakfast this morning that came together in no time and baked while I got the kids to school. I happened to have a banana that was primed and ready for baking. So baked banana oatmeal with hemp fudge and coconut was on the menu.


This was a perfect combination of hot, creamy, crunchy and delicious! This does not set up like cake, but it is a creamy warm oatmeal with texture on the outside.


Baked Banana Oatmeal
(for one)

1/2 cup quick oats
1/2 tsp baking powder
1 pinch salt
1 TBSP NuNaturals Baking Blend or sweetenter of your choice
1 small ripe banana, mashed
1 TBSP flax meal
1/2 cup hot water
fresh grated nutmeg
Hemp Fudge (topping)
coconut (topping)

Mix everything together and bake at 350 degrees for 45 minutes. I used a bowl that I sprayed so things would not stick, if you bake it in a flat dish, it won't take as long.


I used Manitoba Harvest Dark Chocolate Protein for my fudge topping.  This stuff in incredible! It is extremely dark and rich. I just mixed a little bit of stevia in it with some water to make a thick fudge. So good!
