Waffles A la Mode
Every time I think about anything a la mode, I think about it in reference to "Little Miss Sunshine" now.  I love that movie and the meaning of it really hits home for me!  When the little girl orders her waffles a la moday (is how she pronounces it-that cracks me up) and the back and forth conversation that goes on about wether ice cream is good for you or not is great.  After our walk this morning I went a little crazy on the breakfast front.  It was hot and it is Friday...do you need any more reasons for waffles a la mode? Since everything is homemade on this plate, vegan, low fat and low sugar...I would say this was a pretty good choice!  The boys were kind of shocked when I said how about some ice cream on your waffles.  Jay asked if that was healthy (I love him).  I told him, it was no different from the boston cream pie waffles (ice cream is just a frozen custard/pudding) or putting a bunch of syrup on them.  Actually, it may even be better for you!
These were oatmeal flax waffles (made with So Delicious Vanilla Coconut Milk and a flax egg substitute instead of eggs), my vanilla coconut sorbet (also with So Delicious Coconut Milk - love that stuff) and peanut butter granola! I never did anything like this as a kid, but I like doing little things for my kids sometimes that kind of break the rules.  It keeps life fun and interesting!  Besides, I like being a kid sometimes too!

I know I said no more waffles, but how could I not share this one?

    this is waffle day lately! i just saw something similar on Healthy Exposures blog. THIS LOOKS FANTASTIC!!! im gonig to pick up some new gluten-free waffles i saw at the store once i finish up my bread. i need to make an egg n' waffle-wich!! <3

    Can I use the "it's hot and it's a Friday excuse" for all I have eaten today. Oh my gosh, just downed a bowl of oatmeal with chocolate and peanut butter (yes, ANOTHER one!), and now I'm totally drooling over your breakfast. Cannot satiate today, but I did walk outside for an hour. I really do think it's the heat.

    I loved Little Miss Sunshine. Oh my gosh - when the horn was honking and honking in the van, I about fell out of my seat laughin. I need to watch that again soon!

    OMG, these look incredible!     I'm jealous of your waffle skills. I want a pretty, perfect square waffle! They look nice and thick, too. Yum! And I will never tire of your waffles. I'm glad I found someone as in love with them as I am! :P

    Wow those look absolutely amazing!
    I looooove waffles al of a sudden! I made some savory waffles tonight for dinner. It was a complete failure. They went in the trash and I had leftovers for dinner. Such is life...

    i LOVED the movie Little Miss Sunshine! In fact I love that name so much that when I changed my name legally, well, you know what my last name is.

    Anyway beans, yes, you better come help me figure it out next time you're here LOL

    Breaking the rules? I pretty much let Skylar eat whatever she wants, as long as it's just a bite or two, any time. Chips at 9am? Broccoli at midnite after we've brushed teeth? Tofu for breakfast. Yep!
