Potato Pancakes...for Pancake Sunday!
A different take on HEAB's Pancake Sunday!  These are the perfect side to our omelets!  Besides, it gives you a good reason to eat ketchup!  These are light and fluffy and a great way to use up leftover potatoes!


Potato Pancake
1 1/3 cups mashed up cooked potato (this is what I had, but you can give or take a little)
2 TBSP all purpose flour (or rice flour)
1/4 cup egg substitute
1/2 tsp salt
fresh ground pepper to taste

Combine all of the ingredients in a bowl. Mix it together until all starts to stick together. Form into the patty size you would like. I used an ice cream scoop that is about a quarter cup. Wet your hands a little bit with water to keep the pancakes from sticking to your hands. Fry in a nonstick skillet coated with cooking spray until golden brown on each side. I used an electric skillet set on 350 degrees.

8 small pancakes = 47 calories each
