Explaining Myself...
I just thought I should let you know that I have not gone anywhere...I am just enjoying this while it lasts!

Simply Good...
So, there is not really a recipe to this one...which is not really my style, but this one is so easy to throw together (and you can use whatever you like) that it is just unnecessary to tie you down to a recipe. I did try a new technique with the tofu that I really liked, though. I am still pretty new to preparing tofu for myself, but I have read quite a few different rules of thumb for texture. I am sad to say that I am the only one in this house that likes tofu, but I will find a way to win the rest of them over one day! I will probably have to slather it in something that makes it totally hidden from it's true form, but I will get them on my side eventually!!! Anyway, I have always sliced the block of tofu and pressed it. This time I froze the block, then microwaved it on defrost for a couple of minutes and then squeezed it out like a sponge. I was so impressed with how easy it was to handle this way! I seriously got so much water out of it!!! Then I sliced it, pressed it with a towel, salt and peppered it and then cooked it in my electric skillet (coated with cooking spray) until golden brown. I loved the texture! It was nice and crispy on the outside and chewy on the inside. Perfect!!! I left this dish pretty simple. It is just the tofu with grilled zucchini and squash, but I plan to take this technique farther!!!

Orange...my favorite food group!
I have discovered that I love just about any food that is orange (or some variation of the color). My sister asked me this past weekend why my palms are orange. I really did not notice it because it used to be so bad. I looked down at my hands and realized that they do indeed still have a little tint to them. Now, I was not like a cartoon character or anything like that, but I did have quite the orange tint due to the pumpkin consumption that I had gone a little too far with before. So, when I noticed they were still a little orangish I started to think about why. Well, I eat a lot of orange foods. This summer, I have been on a really fresh and raw kick. I have not posted so much this summer due to the fact that I have been eating a lot of salads and fruit. Mostly with carrots and cantaloupe. Does that answer the question of why I still have the tint??? According to my research...this is easy to fix. Good to know, but really why would you care when you can enjoy such wonderful fresh orange produce this summer!!! Anyway, since I don't care about the color and I love the look of this bread, I will share with you a slice of carrot bread made with carrot juice. The illustrator has been making smoothies for breakfast for a while now and carrot juice is one of his favorite juices to use in the berry smoothies. We needed to use it up before the sell by date and here is a recipe I found to do just that. The only things I changed were the addition of an glaze (powdered sugar and dairy free milk) and no walnuts. This one did not stick around for long...it was devoured within minutes!
